Custard Snowskin Mooncake Recipe

Steps of making Custard Snowskin Mooncake

  1. Prepare 2 eggs, 100 grams of milk and 30 grams of sugar in a bowl.

2.Stir them evenly with a hand whisk.

3. Sift 35 grams of low-gluten flour / cake flour , 15 grams of cornstarch and 15 grams of milk powder in a bowl with egg milk.

4. Stir well and sieve into the pot.

5. Add 20 grams of unsalted butter to the pot.

6. Stir the pot over low heat until it becomes a group. ( Be sure to keep stirring to avoid sticking the pot. )

7. Then let it cool for later use.

8. Now let’s make the snowskin part.

9. The materials we need are 50 grams of glutinous rice flour, 50 grams of sticky rice flour, 30 grams of orange flour and 30 grams of white sugar.

10. Put all the ingredients into a large bowl.

11. Stir well with a spoon.

12. Add 30 grams of corn oil and 230 grams of milk to the bowl.

13. Use hand whisk to mix them well.

14. Sift into another high-temperature bowl.

15. Cover with plastic wrap and steam in a steamer for 25 minutes.

16. After steaming, let it cool for a while and knead it with your hands.

17. Add a little coloring to make it pink and purple.

18. Feel free to mix the colors of the dough.

19. One serving of snowy mooncake requires 20 grams of dough.

20. Put 30 grams of custard filling and wrap it up!

21. Wrap snowskin mooncakes with glutinous rice flour.
