Matcha Roll Cake Recipe

Matcha roll cake is actually a combination of cottony soft sponge cake rolled with matcha-flaovoured fresh cream.

First …

  1. Pour 80g of milk and 50g of corn oil / vegetable oil / salad oil to a small bowl.

2. Stir well until emulsified.

3. Add 4 egg yolks to it then mix well.

4. Sift 70g of cake flour and 10g mactha powder.

Meringue part …

5. Add 4 egg whites , 65g of white sugar and 5g of lemon juice in a bowl.

6. Use of electric whisk to beat it until iyt’s wet peak / soft peak.

7. Add the matcha yolk mix to the meringue.

8. Mix it well.

9. Preheat the oven to 145°C and 150°C.

10. Pour from a high place into a 28×28 baking pan.

11. Flatten the cake batter.

12. Tap the cake mold to remove big air bubbles.

13. Bake for 30 minutes.

14. Put it on the drying net to cool down to room temperature. Cover with greased paper to prevent drying.

Matcha-flavoured whipped cream

15. Mix 60g of whipping cream with 8g of matcha powder in a bowl.

16. In another nowl, we add 120g of whipping cream , 20g of white sugar and the matcha paste just mixed.

17. Whipp the cream.

18. Tear off the oily paper from the matcha cake.

19. Spread the whipped cream evenly on the front of the cake.

20. The cream on the rolled end of the cake needs to be thicker.

21. Roll up the cake with the help of a rolling pin.

22. Pull the rolling pin back to tighten it. Put it in the refrigerator for 1 hour.

23. After an hour, take out the refrigerated cake roll.
